- 2 celery stalks, diced
- 1 yellow bell pepper, diced

- 1 teaspoon Italian seasoning
- 6 cups chicken broth
- 2 cups tomato puree or passata
- ½ cup pearl barley
- 2½ cups cooked turkey, shredded
- 3 cups baby spinach
- ¼ cup fresh parsley, chopped
- 2 ounces shaved parmesan cheese (for serving)
