Ingredients
  

  • 6 large dates, pitted
  • 3 tablespoons natural almond butter
  • 3 tablespoons honey
  • 2 tablespoons melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 cup rolled oats
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup raw almonds, roughly chopped
  • 2 tablespoons sunflower seeds
  • 2 cups plain Greek yogurt
  • 2 large bananas, sliced
  • 1 cup fresh strawberries, sliced

Instructions
 

  • Prepare the Oven & Pan
    Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving extra overhang on the sides for easy removal.
  • Make the Base Mixture
    In a food processor or high-speed blender, combine dates, almond butter, honey, coconut oil, and vanilla. Blend until completely smooth and creamy.
  • Combine Dry Ingredients
    Transfer the blended mixture to a large bowl. Add oats, cinnamon, salt, almonds, and sunflower seeds. Mix until all ingredients are evenly coated.
  • Bake the Granola
    Press the mixture firmly into the prepared pan, forming an even layer. Bake for about 20 minutes, or until the top is lightly golden and fragrant.
  • Cool & Crumble
    Remove from the oven and let cool completely. Once cooled, break apart into clusters of your preferred size.
  • Assemble the Parfaits
    In individual glasses or jars, layer Greek yogurt, granola, sliced bananas, and strawberries. Repeat the layers until the glasses are filled.
  • Serve & Enjoy
    Serve immediately or refrigerate until ready to enjoy.
